Ensuring that drain lines are protected from waste food, fats, oils & grease is an important consideration for any caterer or restauranteur.

As grease removal equipment is not front of house and in the past enforcement has been minimal, many caterers have gravitated towards low quality or sub-optimal equipment in an effort to reduce costs, while nominally meeting their obligations.

Although the appetite for expenditure on grease removal remains low, water authorities and landlords have increasingly begun to crack down on sites with poorly maintained, sub-standard or no equipment in place.

The result is that many caterers with old, inferior or no grease removal units are required to source equipment of sufficient size and quality at short notice following site inspections or the emergence of drainage issues in the vicinity.
